Why We Source From Small Farms

Every ingredient in a Patterbar comes from somewhere specific.

This is not true of most packaged food. Most packaged food is made from commodities — interchangeable inputs purchased from whoever offers the best price at the time of procurement. The wheat in a cracker might come from one of a dozen suppliers depending on the quarter. The "dried cherries" in a bar might be sourced differently every year based on availability and cost.

This approach is efficient. It is also why most packaged food tastes the way it does.

The Culinary Standard

Patter has approached ingredient sourcing the way a chef approaches it: every ingredient has a best version, and the best version comes from a specific place.

This is not a romantic notion. It is a practical one. The sourcing decision is the product decision. You cannot make a better bar from a worse ingredient.

The Oregon Blueberry Farm

Our blueberries come from a family-owned farm in Oregon that uses regenerative and sustainable farming practices.

The blueberries are dried to Patterbar's specifications: a moisture level and texture that works in the bar without requiring any additives to stabilize them. Achieving this required direct collaboration with the farm. It was not available from a commodity supplier.

The Medjool Date Growers

Our Medjool dates come from California's Coachella Valley. Medjool dates are the premium variety — larger, softer, and more flavorful than the Deglet Noor dates that dominate commodity production.

Patter spent almost a year working out how to use Medjool dates in a commercial bar. Not because it was easy. Because nothing else tastes the same.

Why This Matters for You

When you eat a Patterbar, you are eating fruit from specific farms in Oregon and California. You are eating nuts that were dry-roasted — no oils, no salt — to preserve their natural flavor. You are eating cacao sourced through Fair Trade channels from farmers who are paid fairly for their labor.

None of this is visible in the nutrition label. But it is why the bar tastes the way it does. And it is why the sourcing decisions we make are not optional — they are the product.

Food comes from places. Food comes from people. The choices made in sourcing it are choices about what kind of food system we want to support.

We have made our choices carefully.
